Fish sticks are a truly overlooked recipe for home cooks. Most at-home cooks think of fish sticks as a quick frozen food type dinner. Well, we are here to prove you wrong. Nothing will beat these fresh homemade crispy pumpkin seed crusted fish sticks. They are a perfect fall recipe, and whats even better, they are so delicious you can make them year round!

This recipe will be perfect for even the most picky-est of eaters. Who doesn’t like pumpkin seeds or fish sticks?! This recipe calls for a bit of cayenne pepper, but if you have a little one at home who is sensitive to slight spice you can compensate with a more milder spice of your choice or even switch it up with a little garlic seasoning.

Ingredients

  • 2 Ilbs Cod or Haddock Fillets
  • 2 Eggs
  • 1/4 Cup Vegetable Oil
  • 1 1/12 Cups Pumkin Seeds
  • 1 tsp Cumin
  • 1 tsp Cayenne Pepper
  • Salt (to Taste)
  • Black Pepper (to Taste)

Directions

Prep: 20 min.|Cook: 10-15 min.|Yields: 4 – 6 Servings

  • Preheat oven to 350 Degrees
  • Place the Pumpkin seeds, cumin, and a pinch of salt & pepper on a large baking sheet and mix around. Toast in the over for 5-10 minutes or until lightly browned
  • While the pumpkin seeds are toasting, start by cutting your fillets into ‘fish sticks’. Then lightly season the sticks with some salt and pepper.
  • In a mixing bowl go ahead and whisk the 2 eggs until well scrambled.
  • Now your pumpkin seed mixture should be cool, either place in a food processor to pulse until fine or place in a ziplock bag and roll with rolling pin to desired crumbly-ness. Be sure to set baking sheet aside for use later.
  • Up next, dip the seasoned sticks into the egg mixture and then coat both sides with the pumpkin seed mixture. Set all sticks aside on your baking sheet.
  • Using a non-stick frying pan, heat the vegetable oil over medium head and sear each side for 2-3 minutes until golden brown.
  • Once all of the sticks have been browned place the fish sticks back on the large baking sheet and place in the oven for finishing. Let bake 5-8 minutes, until cooked through and crispy.

Notes

This recipe calls for cod or haddock, cut into sticks, but if you are adventurous enough you can try to make this dish with any type of fish and eat it as a pumpkin seed crusted fillet, instead of in stick form. Feel free to also experiment with the pumpkin seed mixture. You can try garlic and herb seeds, ranch flavored seeds, or even simple salt and pepper seeds.
