Pan Seared Snook: A Recipe for Beginners

This pan seared snook is a great recipe for beginners. The fish fillets in this recipe can be swapped out with any white fish you wish. We chose to highlight the Snook fillets in this recipe because they can not be bought at a market or in a restaurant, due to the fact that it is illegal to buy or sell Snook in any form in the US.

If you can catch yourself a fresh Snook from our Florida waters, this is a nice simple recipe that beginners will have no problem executing. Snook pairs well with various sides, wether you choose some frozen brocoli or do it up big with a side of seafood risotto!

Ingredients

  • 2 Large Snook Fillets
  • 2 Tbsp Butter
  • Light Oive Oil
  • All Purpose Flour
  • Salt
  • Ground Black Pepper
  • Spices of Your Choice (optional)

Directions

Prep: 10 min.|Cook: 12-18 min.|Yields: 3-6 Servings

  • Start by filleting and cleaning your Snook.
  • Now that the fish is clean, cut the fillets into 6 equal portions.
  • Preheat the oven to 350 degrees and line a baking dish with parchment paper. (If you dont ahve parchment paper use a greased non-stick baking dish)
  • Now season your fish with the salt, pepper and the other seasonings you chose. Lightly dust each side of the fillets with the flour.
  • Add the butter into the pan and enough oil to coat the bottom of the pan, heat on medium-high heat.
  • Now that the butter and oil are hot, add your Snook and sear for 2-3 minutes on each side. (This will need to be done in 3 batches, only 2 fillets in the pan at once)
  • As each set of fillets get seared, place them in the baking dish that you prepared earlier. Once all fillets have been added to the dish bake in the over for about 10 minutes.
  • Be sure to cook the fillets all the way through. If a table knife can be slid into the center of the fish with ease, the fish is cooked properly. If there is some resistance add 2 minute increments, until finished.
  • Now that your fillets are cooked, serve immediately with your desired sides.

Notes

As mentioned previously, if you dont have Snook on hand any white fish will do with this simple beginner recipe, such as: haddock, cod or halibut. This recipe can be modified with various spices as well, like: italian, cajun, garlic, asian, etc.

Pan seared whitefish can be served with many different sides. If you want to have a quick dinner try frozen veggies, potatoes, or minute rice. If you wish to try a more difficult recipe try pairing the fish with a nice seafood risotto or homemade scalloped potatoes!
