Bacon, Lettuce & Tomato Pasta Salad

Over time the BLT has become an American staple in almost every diner. If the last few years have been any indication, bacon has begun to take over the culinary field. So, we saw fit to add this delicious BLT pasta salad to our Ingman Marine cookbook.

Whether for a side, a meal or a snack this delicious dish will be sure to satisfy anglers of any age. It is easy to make and relatively quick to whip up. We encourage you to take your best shot at it!

Ingredients

  • 120z of Your Favorite Pasta
  • 12oz Lean Bacon
  • 3 Tomatoes, Large Diced
  • 1 Tbsp FreshTyme, Chopped
  • 1 Clove of Garlic, Minced
  • 5 Cups Romaine Hearts, Chopped
  • .5 Cups Milk
  • .5 Cups Mayo
  • .25 Cups Sour Cream
  • 4 Tbsp Chopped Scallions
  • Salt and Pepper, To Taste

Directions

Prep: 20 min. | Cook: 25-30 min. | Yields: 4-8 servings

  • Bring the water for your pasta to a boil, add the pasta and cook according to the box. While your pasta is cooking, start cooking your bacon in a large skillet over medium high heat. Cook until desired crispy-ness.
  • Once your bacon is cooked, place on a papertowel to dry the oil. Then drain all but 3 tbsp of the bacon oil from the pan.
  • Now you should be at a stopping place, your pasta should be done cooking. Drain the pasta, place in a large mixing bow, and toss with the milk. Set aside.
  • Add the tomatoes, thyme and garlic tot he pan with the reserved bacon grease. Stir in the pan while cooking on medium low heat until warm. Season with the some salt and pepper and remove from heat.
  • Your bacon should be dried by now, begin to crumble it. Be sure to leave the bacon decent sized, you dont want it to look like bacon bits, more like medium sized flakes.
  • Toss the crumbled bacon and the warmed tomato mixture with the pasta mixture. Once mixed fully, now add the mayo, sour cream and chives with the rest until evenly mixed. Season with salt and pepper.

Notes

If you are one of the few that doesn’t enjoy pork bacon, you can switch to turkey bacon or even veggie bacon. Or maybe you aren’t a mayo fan? Try switching the mayo to Cesar dressing and the bacon to grilled chicken for a nice ‘Cesar pasta salad’.

If you want the salad to be more of a meal than a side dish, you can add ingredients to make it more hearty. Try adding sliced hard boiled eggs, avocado and some grilled chicken for a ‘cobb pasta salad’.

The moral here is; you can play with this recipe and create a various amount of delicious recipes from this single recipe!
